Economies-of-scale seem like a pretty weak effect when it comes to the quality of restaurant food. Beyond a certain minimum size, which seems pretty small, bigger generally means worse, not better.


There might be an indirect economy-of-scale effect though. The LA card clubs are big enough that they might serve as destination venues to some small extent. That is, people might actually go there to eat, drink, see shows, have meetings (?), etc. By contrast, people go to Bay Area card clubs (with the arguable exception of the Garden City) exclusively to gamble, and in between bets they'll eat whatever grub happens to be served.
