As far as Yosemite goes, there's a good chance that Hwy 120 across Tioga 
Pass will not be open by May 21.  See:

Much of the drive down I-5 is not scenic, unless you like farmland and 
feedlots.  I find the drive through Tehachapi and across the Mojave desert 
quite pleasant.  YMMV.

And yeah, what Dieter said: you gotta go for at least two days (I would say 
three or more) to make the drive worthwhile.
